Sofitel Legend Metropole Hanoi's Exclusive 'Rendez-vous' Dining Series Returns

Sofitel Legend Metropole Hanoi’s contemporary French fine dining restaurant Le Beaulieu introduces the latest chapter in its celebrated ‘Rendez-vous’ dining series with an exceptional culinary collaboration on Sept. 25-26.


Chef Charles Degrendele of Le Beaulieu, the 125-year-old French fine dining institution, joins forces with Christian Chu, owner and Chef Patron of the Prague-based MICHELIN-starred restaurant LEVITATE and the Czech Republic’s first MICHELIN-starred chef of Vietnamese origin. Born in Hoa Binh, Vietnam, and later establishing his career in Europe, Chef Christian brings a distinctive approach that blends Nordic techniques, seasonal ingredients sourced locally and internationally, and refined Asian influences drawn from his Vietnamese heritage.

Together the two chefs will present an exquisite five-course dinner menu uniting modern French finesse with their complementary perspectives. The menu highlights premium ingredients including caviar, truffles, foie gras and blue lobster, offering diners a carefully composed meeting of two culinary visions.







The exclusive dinners take place from 6 p.m. to 10:30 p.m. and are priced at VND 4,600,000++ per person for dinner only, or VND 7,100,000++ per person for dinner with wine pairings.
