 The Westin Resort Nusa Dua, Bali is delighted to announce the appointment of Chef Edwin Sta Ana as the new Chef de Cuisine of Hamabe Japanese Restaurant. With an illustrious career and a passion for culinary excellence, Chef Edwin brings a wealth of experience and innovative flair to Hamabe.



Born in the Philippines and raised in South Africa, Chef Edwin Sta Ana's multicultural upbringing has deeply influenced his culinary style. After completing his schooling and earning a degree in Arts and Business Economics, he pursued his passion for cooking and graduated with a degree in Culinary Arts.


 


Chef Edwin's career highlights include being a pivotal part of the opening task force team for three Nobu locations, renowned for their exquisite Japanese-Peruvian fusion cuisine. His tenure with the luxurious Ritz Carlton brand saw him pioneering a modern approach to contemporary Japanese cuisine. Additionally, Chef Edwin's expertise was showcased during two world prestigious international soccer events, where he catered to VIPs and soccer teams.


 


In his most recent role at the Park Hyatt Hotel Doha, Chef Edwin successfully renovated and redefined the Japanese/Nikkei cuisine, leading the restaurant to win back-to-back awards for the best Japanese restaurant.


 


Hamabe Japanese Restaurant, nestled within The Westin Resort Nusa Dua, Bali, offers an exceptional dining experience with authentic Japanese flavors. The restaurant recently underwent a stunning facelift, blending contemporary design with the tranquility of a traditional Japanese garden.


 


At Hamabe, guests can enjoy the theatrical performance of the teppanyaki counter, where dishes are skillfully prepared before their eyes. The Sushi and Sashimi counter highlights the artistic precision and knife skills of Hamabe’s culinary team, while the exclusive robata grill introduces a traditional cooking method from Japan’s Sendai region. For a more interactive dining experience, guests can also indulge in shabu-shabu, where fresh ingredients are cooked at the table in a simmering hot pot.
